Having FIOS Internet and Brighthouse TV - Questions

Hello! I am current Brighthouse Networks TV and Internet customer. However, we have had FIOS available at our house since we moved here. Now, with some of the great deals they are offering as well as Brighthouse raising their prices continually, we have decided to look into getting FIOS Internet installed. A couple questions. First, we are planning to keep BHN TV. Does that automatically mean that we'll have to connect our router to the ONT using ethernet and not Coax since Brighthouse TV will still be running over the coax in the house? Our phone jacks are all wired with Cat5e, and we've never used a landline phone. All of the Cat5e cabling for the house terminates in the Garage Attic (where I'm assuming the ONT would be located). Would it be fairly straight forward for the tech to use our existing Cat5e and just change the wall plates to ethernet jacks (at least in the room where we would locate the router). Would the tech be willing to do this, or would I have to do it? I've read a little on the forum, and it seems that any install of 150mb or great automatically gets an ethernet run. However, we were planning on getting the 75mb service. Thanks in advance for your help!
