FIOS 100/100 upgrade tomorrow - What should I expect?

Currently I have 50/50. I also have Quantum TV with 3 boxes. One next to the router in the basement, one on the first floor and one in a bedroom that also includes a FIOS Network Extender. I have a few baby monitors and having the 5ghz spectrum is much better than 2.4 when having video baby monitors. I was thinking of upgrading to a Quantum Gateway and while trying to get one for free, Verizon offered to upgrade me to 100/100 and I would get the Gateway for free. I want the Gateway as I would like to be able to enable guests to use my Wifi without giving up my main Wifi password, plus I have a few 802.11ac capable devices. The extra speed is nice as I run 3 Dropcams 24 hours a day as security cameras plus the usual stuff like Netflix/gaming/Hulu etc. I know the 100/100 really isn't necessary but its only going to end up costing me $5 and I'd be getting the router for free. I was surprised they needed to send a tech out to complete my install tomorrow and was curious as to what to expect. What needs to be done outside the home and in my garage where my original ONT still sits from I believe 2010. I currently have COAX wiring running to my TV boxes and my FIOS Extender. Does all new CAT 5 wiring need to be run all around my home or does just something need to be done outside? Will my FIOS Network Extender still work? I don't care either way, but I would like to know what to expect with 2 small children and our nanny involved. I also will be working from home tomorrow and want to know how long I'd need to run off my iPhone hotspot if my internet goes down. Thanks for your help.
